Imagine that various types of insects and arachnides become 100 times larger in size than what they really are. Assuming that they can survive with such size, can humanity survive? What would we do?

There is not a single chance that humanity can survive in such an environment, it's just impossible. We can potentially fight a single species or two, but in this case when all insects and even arachnides are giant, we're outmatched.
The giant ants can end all human civilization.
Also some species like locust would end all crops in a couple of days

It's not just humanity, all life will end. There would be no food for any species to survive
For humans, the moment we lose control of our infrastructures will mark our end. We have some advanced weapons but that won't hold for long
